Stir-fried Calabash Gourd
Calabash (bottle gourd) cut into strips, stir-fried with ginger and sesame oil, then left to soften under the lid.

Method
- Wash and peel the calabash gourd, then slice it into strips.
- Dice the ginger.
- Heat the sesame oil in a pan or wok for 30 seconds.
- Add the ginger and stir-fry for 1 minute.
- Add the gourd and the salt.
- Stir-fry for 1–2 minutes, until the gourd is evenly coated with salt.
- Cover the pan with a lid and let it stew until you see steam.
- Set aside for 20 minutes.
- Serve.
Tips
- Calabash gourd is also sold as bottle gourd, opo squash or lauki.
- Taste a tiny piece of the raw gourd before you cook it. If it tastes bitter, throw it away: bitter gourds of this kind can make you unwell.
