Curry Fried Mushrooms
Mushroom slices in a light curry batter, shallow-fried until golden. A crunchy snack or side.

Method
- Put the self-raising flour, salt, sugar, baking soda and curry powder into a large bowl.
- Pour in the water and stir until the batter is smooth. Let it rest for 15 minutes.
- Slice the mushrooms from top to stem into 3 slices (big mushrooms) or 2 slices (small ones). Add them to the batter and mix well.
- Pour about 1 cm of cooking oil into a frying pan (a smaller pan works best) and heat it.
- Test the oil with a wooden chopstick or skewer. When bubbles form around it, the oil is ready. Add the mushrooms piece by piece and fry until golden brown underneath, then turn them over and fry until golden on the other side.
- Drain on paper towel.
- Serve.
Tips
- Fry a few pieces at a time so the oil stays hot and the batter stays crisp.
- Never leave hot oil unattended.
